Recipe: Farm Fresh Gazpacho

 

Ingredients:

• 4 large Tomatoes, chopped
• 1 Cucumber, peeled and chopped
• 1 Green Bell Pepper, chopped
• 1 Red Onion, chopped
• 2 cloves Garlic, minced
• 1 cup Cherry Tomatoes, halved
• 1 Green Zucchini, chopped
• 1 Yellow Zucchini, chopped
• 1/4 cup Fresh Basil, chopped
• 1/4 cup Fresh Parsley, chopped
• 1/4 cup Olive Oil
• 2 tablespoons Red Wine Vinegar
• 1 teaspoon Salt
• 1/2 teaspoon Black Pepper
• Juice of 1 Lemon

 

Instructions:

1. Prepare the Vegetables: Wash and chop all vegetables as listed above.
2. Blend Ingredients: In a large blender or food processor, combine the chopped tomatoes, cucumber, green bell pepper, red onion, garlic, cherry tomatoes, green zucchini, and yellow zucchini. Blend until smooth, leaving some small chunks for texture.
3. Add Seasonings: Pour the blended mixture into a large bowl. Stir in the chopped basil, parsley, olive oil, red wine vinegar, salt, black pepper, and lemon juice.
4. Chill: Cover the bowl and refrigerate the gazpacho for at least 2 hours to allow the flavors to meld.
5. Serve: Serve the gazpacho chilled, garnished with additional chopped basil and parsley if desired.
