Recipe: Farm-Fresh Stuffed Bell Peppers

Ingredients:

  • 6 large Bell Peppers (any color)
  • 1 cup Quinoa
  • 2 cups Vegetable Broth
  • 2 tablespoons Olive Oil
  • 1 Red Onion, diced
  • 2 cloves Garlic, minced
  • 1 Yellow Zucchini, diced
  • 1 Green Zucchini, diced
  • 1 cup Cherry Tomatoes, halved
  • 1 cup Corn Kernels (fresh or frozen)
  • 1 cup Black Beans, rinsed and drained
  • 1/4 cup Fresh Basil, chopped
  • 1/4 cup Fresh Parsley, chopped
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • Salt and Pepper to taste
  • 1 cup Shredded Cheese (optional)
  • Fresh Parsley or Basil leaves (for garnish)

 

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Cook the Quinoa: Rinse the quinoa under cold water. In a medium saucepan, bring the vegetable broth to a boil. Add the quinoa, reduce the heat to low, cover, and simmer for 15 minutes, or until the quinoa is cooked and the liquid is absorbed. Fluff with a fork and set aside.
  3. Prepare the Bell Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers in a baking dish.
  4. Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced red onion and minced garlic, and sauté until fragrant, about 5 minutes. Add the diced yellow and green zucchinis, and cook for another 5 minutes until tender.
  5. Combine Ingredients: In a large bowl, combine the cooked quinoa, sautéed vegetables, halved cherry tomatoes, corn kernels, black beans, chopped basil, parsley, cumin, paprika, salt, and pepper. Mix well.
  6. Stuff the Peppers: Spoon the quinoa mixture into the prepared bell peppers. If desired, top with shredded cheese.
  7. Bake: Cover the baking dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 10 minutes, or until the peppers are tender and the cheese is melted and bubbly.
  8. Serve: Garnish with fresh parsley or basil leaves and serve hot.
