Recipe: Harvest Bounty Soup
Ingredients:
- 2 tablespoons Olive Oil
- 1 large Onion, diced
- 2 cloves Garlic, minced
- 1 cup Carrots, sliced
- 1 cup Beets, peeled and diced
- 1 cup Potatoes, diced
- 1 cup Green Beans, trimmed and cut into 1-inch pieces
- 1 cup Broccoli florets
- 1 Yellow Zucchini, sliced
- 1 Green Zucchini, sliced
- 1 cup Red Onions, diced
- 1 cup Butternut Squash, peeled and diced
- 4 cups Vegetable Broth
- 2 cups Water
- 1 teaspoon Dried Thyme
- 1 teaspoon Dried Rosemary
- Salt and Pepper to taste
- Fresh Parsley, chopped (for garnish)
Instructions:
- Prepare the Vegetables: Wash and chop all vegetables as listed above.
- Sauté Onions and Garlic: In a large pot, heat olive oil over medium heat. Add the diced onions and minced garlic, and sauté until translucent, about 5 minutes.
- Add Root Vegetables: Add the carrots, beets, and potatoes to the pot. Cook for about 5-7 minutes, stirring occasionally.
- Add Remaining Vegetables: Add the green beans, broccoli, zucchinis, red onions, and butternut squash. Cook for another 5 minutes.
- Add Liquid and Seasonings: Pour in the vegetable broth and water. Add dried thyme, dried rosemary, salt, and pepper. Stir well to combine.
- Simmer: Bring the soup to a boil, then reduce the heat to low. Cover and simmer for about 30 minutes, or until all the vegetables are tender.
- Adjust Seasoning: Taste the soup and adjust the seasoning as needed.
- Serve: Ladle the soup into bowls, garnish with fresh parsley, and serve hot.
