Recipe: Herb-Infused Roasted Vegetables
Ingredients:
- 2 tablespoons Olive Oil
- 1 large Red Onion, cut into wedges
- 1 Green Bell Pepper, sliced
- 1 Yellow Zucchini, sliced
- 1 Green Zucchini, sliced
- 1 cup Cherry Tomatoes, halved
- 1 cup Carrots, sliced
- 1 cup Broccoli florets
- 1 cup Potatoes, diced
- 1 cup Butternut Squash, diced
- 1 tablespoon Fresh Rosemary, chopped
- 1 tablespoon Fresh Thyme, chopped
- 1/4 cup Fresh Parsley, chopped
- Salt and Pepper to taste
Instructions:
- Preheat the Oven: Preheat your oven to 400°F (200°C).
- Prepare the Vegetables: Wash and chop all vegetables as listed above.
- Mix Vegetables and Herbs: In a large bowl, combine the red onion, green bell pepper, zucchinis, cherry tomatoes, carrots, broccoli, potatoes, and butternut squash. Add the chopped rosemary, thyme, salt, and pepper. Drizzle with olive oil and toss to coat evenly.
- Roast the Vegetables: Spread the vegetable mixture in a single layer on a large baking sheet. Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and lightly browned.
- Garnish and Serve: Remove from the oven, sprinkle with fresh parsley, and serve hot.
