Recipe: Rustic Vegetable Medley

 

Ingredients:

• 2 tablespoons Olive Oil
• 1 large Red Onion, sliced
• 2 cloves Garlic, minced
• 1 Green Bell Pepper, sliced
• 1 Yellow Zucchini, sliced
• 1 Green Zucchini, sliced
• 1 cup Cherry Tomatoes, halved
• 1 cup Carrots, sliced
• 1 cup Green Beans, trimmed
• 1 cup Broccoli florets
• 1 cup Potatoes, diced
• 1 teaspoon Dried Thyme
• 1 teaspoon Dried Rosemary
• Salt and Pepper to taste
• Fresh Basil, chopped (for garnish)

 

Instructions:

 

1. Prepare the Vegetables: Wash and chop all vegetables as listed above.
2. Preheat the Oven: Preheat your oven to 400°F (200°C).
3. Sauté Onions and Garlic: In a large skillet, heat olive oil over medium heat. Add the sliced red onion and minced garlic, and sauté until fragrant, about 5 minutes.
4. Combine Vegetables: In a large baking dish, combine the sautéed onions and garlic with the green bell pepper, zucchinis, cherry tomatoes, carrots, green beans, broccoli, and potatoes.
5. Season: Sprinkle dried thyme, dried rosemary, salt, and pepper over the vegetables. Toss to ensure everything is evenly coated with oil and seasonings.
6. Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the vegetables are tender and slightly caramelized.
7. Serve: Remove from the oven, garnish with fresh basil, and serve hot as a main dish or a hearty side.
