Recipe: Summer Harvest Veggie Skewers
Ingredients:
- 1 Green Bell Pepper, cut into chunks
- 1 Red Bell Pepper, cut into chunks
- 1 Yellow Zucchini, sliced
- 1 Green Zucchini, sliced
- 1 Red Onion, cut into wedges
- 1 cup Cherry Tomatoes
- 1 cup Button Mushrooms
- 1 cup Carrots, cut into thick slices
- 1/4 cup Olive Oil
- 2 tablespoons Balsamic Vinegar
- 1 tablespoon Fresh Rosemary, chopped
- 1 tablespoon Fresh Thyme, chopped
- Salt and Pepper to taste
- Fresh Basil leaves (for garnish)
Instructions:
- Prepare the Vegetables: Wash and chop all vegetables as listed above.
- Marinate the Vegetables: In a large bowl, combine the olive oil, balsamic vinegar, chopped rosemary, thyme, salt, and pepper. Add the vegetables and toss to coat evenly. Let them marinate for at least 30 minutes.
- Assemble the Skewers: Thread the marinated vegetables onto skewers, alternating between different types of vegetables for a colorful presentation.
- Preheat the Grill: Preheat your grill to medium-high heat.
- Grill the Skewers: Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the vegetables are tender and slightly charred.
