Recipe: Summer Veggie Pasta Salad

 

Ingredients:

• 8 oz Pasta (your choice)
• 1 Green Bell Pepper, diced
• 1 Red Bell Pepper, diced
• 1 Yellow Zucchini, sliced
• 1 Green Zucchini, sliced
• 1 cup Cherry Tomatoes, halved
• 1 Cucumber, diced
• 1 Red Onion, finely chopped
• 1 cup Broccoli florets
• 1/4 cup Fresh Basil, chopped
• 1/4 cup Fresh Parsley, chopped
• 1/4 cup Olive Oil
• 2 tablespoons Red Wine Vinegar
• 1 tablespoon Fresh Lemon Juice
• 1 teaspoon Dijon Mustard
• Salt and Pepper to taste

 

Instructions:

1. Cook the Pasta: Cook the pasta according to the package instructions. Drain and set aside to cool.
2. Prepare the Vegetables: Wash and chop all vegetables as listed above.
3. Make the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, Dijon mustard, salt, and pepper.
4. Combine Ingredients: In a large bowl, combine the cooked pasta, diced green and red bell peppers, sliced yellow and green zucchinis, cherry tomatoes, cucumber, red onion, and broccoli florets.
5. Add Dressing: Pour the dressing over the pasta and vegetables. Toss to coat evenly.
6. Add Fresh Herbs: Stir in the chopped basil and parsley.
7. Serve: Serve the pasta salad chilled or at room temperature. Garnish with additional fresh herbs if desired.
